Semi-carbonic maceration to encourage the aromas, vatting for about 8 days, alcoholic fermentation finished at low temperature. Ageing in vats to preserve the aromatic potential.

This appellation has the steepest average slopes (sometimes up to 50%), and the plots cling to the steep hillsides. The plots are east-south-east facing, on granite and sand or volcano-sedimentary soils. Geographically located more to the west and at higher altitudes, the soils are essentially of

primary origin (gneiss, patches of blue rock, sandstone or dark carboniferous schists, granites, etc.).
