This chardonnay is made in a fuller, more upfront style, using the technique of extended barrel maturation, lees stirring and partial malo-lactic fermentation. It has obvious oak influence, to support a solid core of fruit, rounded out by a creamy textural undertone, lending the wine weight and length.
Enjoy with firm white fish, poultry, white meat also works with a little bit of spice.
The grapes for this blend were chosen from several premium Barossa vineyards right across the region. Parcels of fruit from each vineyard were kept separate in small parcels and blended just prior to bottling. The vineyards range in age with the oldest being 40 years. The cropping ability of these mature age vines is limited by the terroir and the natural annual growth pattern of the vines.
To be enjoyed with a Mexican dishes, Red meat hard cheese.
